Can I sub lemon extract for the lemon oil? If so, how much? I work at Meals on Wheels and one of our big fundraisers every year is a Mardi Gras. I'm going to make these cupcakes for the office on Fat Tuesday! Yes, you can use about 1/2 teaspoon of lemon extract for the lemon oil. Adjust to taste. ~ MaryJane
