Hi Carol. When working with a Pain de Mie pan, in general, the 9 inch pan can hold recipes that use between 3 to 4 cups of flour and the larger 13 inch pan can hold recipes that use between 5 to 6 cups of flour. Depending on the other ingredients that are in a recipe, you may (or may not) get a perfect fit with the lid on. We try to use recipes that use the lower end of those flour measurements to allow for expansion and a good fit. Happy Baking!
