When you state 4 cups (17 ounces) of flour for this recipe it is confusing. what do you mean? 17 ounce in addition to the 4 cups? If so why not state approx 6 cups? Because I want to let people know that 4 cups of flour should weigh 17 ounces, John; flour weighs 4 1/4 ounces per cup. Flour amount is important in bread - it makes a huge difference in rise and texture. Sorry you found this confusing - PJH
