I love all your bread recipes and must have a million of them bookmarked to try. I just wanted to add that I use one of those big rectangular plastic containers that spinach comes in to use as a proofing box for my loaves. I can see through it and it works perfectly! Great idea, Mags - Necessity is the mother of some great inventions... :) PJH
