First let me say the KA Classic White Sandwich bread is a winner, both with me and for a friend. She said even her grandson, who normally doesn't eat bread, loved it. But I have a question. I normally bake one loaf using the KA Classic White Sandwich Bread, but the Walter Sands Basic White Bread formula says it will make two loaves. That is where the confusion begins, i.e. the total percentages don't agree. Comparing the two using 12 oz(454 g) of water for both and honey for both I get 196% TP for the Walter Sands Basic White and 219% TP for the Classic white. What is really glaring is the 63% water for the Walter Sands formula and 95% water for the Classic white. The amounts of yeast and butter also look suspicious,
I would like to start baking two loaves at a time, so would you be good enough to clarify the discrepancy for me? Thanks.
