Deep Dish Pizza Recipe in the style of Burt Katz

Ingredients:

2-1/4) Cups All Purpose Flour (285 grams)

¾) Cup Water (171 grams)

1-1/2) Tablespoons Canola Oil (20 grams)

¾) teaspoon Active Dry Yeast (2.8 grams)

¾) teaspoon salt (4.2 grams)

1) teaspoon sugar (1.3 grams)

1 lb.) Sliced Mozzarella

Directions:

1) Mix ingredients for 5 minutes and let rest for 2 hours.

2) Preheat oven to 450°

3) Lightly grease 12” x 2” pan with canola oil.

4) Spread dough to edges. Don’t spread up the side.

5) Lay cheese halfway up pizza pan and over lap by about a third.

6) Top with sauce, oregano, basil, (teaspoon of sugar, optional). Then grate some Parmesan on top.

7) Add additional ingredients, sausage, pepperoni, green peppers, mushrooms, etc.

8) Watch! (usually about 35 minutes or so). Let rest 5 to 10 minutes before cutting.
