Very nice dough. I made this for dinner tonight, from start to finish it was almost three hours of work time but well worth it. The dough was very buttery and worked nicely into two 9" inch round cake pans. I almost wish I had cut off a little of the dough, just to keep the crust on the sides a little thinner but following these directions, things came out flawlessly. One pie had sausage, the other mushrooms. A bit less corn flour than my other recipe which really celebrates the corn. I ended up using a Goya fine corn flour which I like in these blended flour recipes. I find the medium grind too gritty for my taste. This was really good, my wife was happy and I will certainly do these again. Always glad I come to King Arthur and I really enjoy Ms. Hamel's blog.
