This looks delicious! These days I'm restricted to low fat cheese (sigh), with only the occasional slice of the really good stuff permitted. Any idea how well this cooks up with low fat cheddar? Should do quite well with low-fat cheddar, Maggie - the flavor won't be as pronounced, but the texture should be just fine. PJH
