Yum! Several thoughts have come into my head as i was reading this. 1) i love making mac & cheese with Cabot's pepperjack! i haven't been able to find it lately, but i'll just have to try other stores. That is really good mac & cheese! 2) Your recipe is pretty similar to mine, except i don't bake mine and i usually use cornstarch rather than flour. We love this stuff! 3) Thanks for the idea of mixing oil into the breadcrumbs to make them crispier. i'll have to give that a try next time i top something with bread crumbs.
