This looks so yummy! I can't wait to try this recipe. Does anyone know if you can freeze crystallized ginger? I have a TON of it, and don't want it to spoil. You can freeze it, but it won't spoil; just keep it well-wrapped and cool, Kim. Enjoy - PJH
