These look great. I'm wondering how long crystallized ginger lasts. I *think* I have some, but have no clue when I bought it or even for what. Which is scary. I might just have to make regular shortbread to celebrate solstice instead. Alissa, go ahead and use it. The only thing that happens is it gets hard, and you're going to pulverize it anyway... PJH
