Oh my. Just came back to this blog entry from a Facebook post and you asked about the cherry almond shortbread I mentioned those many years ago. I just finished making a batch for Christmas. To the basic recipe I gave in my earlier post I add 1 tablespoon (yes a whole tablespoon) of almond extract and 1/2 cup of chopped candied cherries. I rinse the candied cherries to get the syrup off them and dry them on paper towel before I chop them in my mini food processor and measure 1/2 cup after chopping. Sometimes I substitute some almond flour for the all purpose flour but my brother-in-law has family that can't eat the almond flour (extract is okay) so I usually leave it out at Christmas.
