I've been using Cook's Illustrated's version (uses beer, vinegar) and love it. I like the idea/option of keeping it in the fridge-inevitably I forget to make it the night before the day I need to use it! I have trouble with the bottom of the loaves getting too crisp and hard. Maybe your method will work-I'll try it! Thanks.
