I've been making these breads since the book first came out and there have been times when the dough has been left in the fridge for an unconscionable amount of time (3 weeks +/-) and it STILL comes out delicious! It's really good shortly after the initial overnight rise, but it's very forgiving if you leave it for a while! Cynthia, I thought 9 days was stretching it - thanks for that information, now I'll feel free to let it sit awhile longer. PJH
