Hi there, Suzanne! We're so glad to hear that you're excited about bread baking! While we haven't tried baking no-knead bread in a crockpot, we imagine that it would result in a softer, potentially gummy loaf rather than the crusty one this recipe was created to make. If you'd like to experiment with this, you're certainly more than welcome to — it looks like there are a few blogs out there that outline how to do this. We have tried baking steamed breads, like Traditional Boston Brown Bread, in a crockpot and found that it works well because of the way the crockpot holds in steam.
