I would like to modify this recipe to make german "broetchen" http://www.germandeli.com/Brtchen-50g-1-78oz0-each-5pc-bag Which are crusty rolls about 5" long. What size pieces of dough should I use and how would I adjust the baking time for theses smaller rolls?
