You should give it a try Jackie with a test batch! We'd definitely suggest doing a test batch before Thanksgiving just to make sure you still like the results. Usually, activated yeast won't start to really die in the freezer until it's been 3 days or so so if you can make them the weekend before Thanksgiving, you'll likely get the best results.
