Cool post, thank you, PJ and crew! I do have a concern about freezing cookie dough. I imagine that freezing will do essentially what chilling does, so when a dough is not truly meant to be chilled—like, they contain oats and are SUPPOSED to be wide, flat, thin…don’t chill them. I was really looking forward to an easy way to make a cookie recipe from the gals at Our Best Bites, but the recipe was not conducive to chilling and the oats soaked up so much of the liquid during their day in the fridge—I was really bummed. Anyway, maybe just add more liquid to that one. I’ll try again sometime…
