thank you for this great posting. can we also freeze the whole wheat bread dough? usually i baked this bread start from 8pm after my kid sleeping, until 1 am (i need time to cool it down, slice it, and pack it). to save the time, can i just freeze the dough while proofing and leave it up to 18 hour (bake it the next day). i have tried to refrigerate it once, but after 2 hours, it becomes almost doubled in size. so i hurriedly bake it. it is a saver if i can freeze it. thank you.
