I have mixed these twice both by hand - the first time I added the liquid slowly and didn't use it all. I had about 3-4T left not used. I kneaded it for at least 10 minutes and it never got smooth. I had it in my oven on proof (95 degrees) for almost 90 minutes and it didn't do much. I trashed that and tried a second try. The second try I added all of the liquid in slowly but used it all. Once again I mixed and kneaded it by hand. It did get smooth and I was able to get a window pane. It didn't quite double but shaped them into balls and placed them in a hamburger bun pan. One ball in each cup. I put them in a plastic bag to rise. they were squishy (bounced back when I poked them) and baked them. These were good but they were dense. They are not fluffy like the pictures.

I live in the NW corner of MT - it has been cold and humid outside but I have the house warm - 68-70.

What have I missed or need to do differently?
