Hi Karen! You could certainly freeze your rolls to be baked during Thanksgiving and Christmas. Generally doughs last in the freezer about 12 weeks before the quality starts to diminish. We recommend increasing the yeast by 20% in the recipe to counteract the freezer's harsh conditions on yeast. We have a great blog post about freezing your yeasted baked goods here. Happy baking!
