Joyce, potato starch and potato flour are two very different ingredients that cannot be used interchangeably. If you don't have potato flour, you can use 1/4 cup of instant mashed potato flakes, which are usually available at local grocery stores. (They're the key to making the dough soft and tender, so you don't want to leave them out.) Happy baking! Kye@KAF
