I tried for a long rest in the fridge after first rise-- aiming for more flavor and more convenient bake time. After baking, the crust under the toppings was perfect, the outer crust started a little oven spring, but then ended up hard and crunchy, the exact opposite of what I had hoped for. It did taste good though. What are possible reasons the outer crust hardened?
