I'm new to sourdough, but this is the first time I've seen it recommended to pour off part of the liquid before stirring the starter. Do you think I should always do that? Won't the starter get thicker and thicker each time? It's a balance, Steve; I pour the liquid off when there's a lot of grayish liquid on top, after I've let it sit for a month or two without feeding. Otherwise, if I feed it regularly, there's not that much liquid, and I just stir it in. If you stir it in every time, even when there's a lot of liquid, it gets too thin. if you never stir it in, it gets too thcik. Just play it by eye/ear; you'll be fine. PJH
