Wow! This looks amazing. It looks like you use your mixer to cut in the butter-is this correct? When you toss in the liquid do you use your hands, a fork, something else? I guess its hard to shoot photos and toss at the same time. Correct. You may certainly mix by hand. I generally use a plastic bowl scraper to "fluff" the wet and dry together, finishing with my hands to shape the dough into a coin. Frank @ KAF.
