Learn, learn, learn. Rest and Tip!!! We wanted a relatively quick breakfast on Wednesday, Veteran's Day and I had lots of King Arthur mixes in the pantry from when a large discount was offered for buying 10 mixes. So---make muffins. I chose Apple Walnut whole grain mix and followed the package instructions exactly, except for resting the batter for 30 minutes, taking the chill off the milk and tipping the muffins in the tin before removing them. What a difference from my past experiences with flat topped soggy bottom muffins. I think these two steps should be added to the package instructions for those who sometimes use mixes.
