I was wondering if you can make muffin batter the night before and keep it in the fridge? I love the idea of fresh muffins in the morning, but I wake up early with two kids and it's tough to bake first thing. If I could pour batter in the cups and stick in the oven that would make it much easier. Better still, could I pour the batter into the cups the night before? Just curious :)
Tessa, I think some recipes work better than otehrs - like, the thicker the batter, the better they seem to work. Give this one a try, let us know what happens- PJH
