The 30 min rest. I completely understand the process for doing this. My question is: Would there be any difference in scooping the batter into the muffin cups right after mixing, then leaving the muffin pan on the counter to rest for the 30 mins? I did this - but of course have nothing to compare to. I also put half of the muffins in the freezer - unbaked - after the 30 min rest in the muffin pan. I will report back when I have baked them - as to whether this recipe works with this handy technique.
