I looked through the blog and found several comments about the 30 minute rest time resulting in a better rise. I was wondering if these whole wheat muffin recipes which call for the 30 minute rest could be made up the night before and baked the next morning? If yes, would you leave batter in bowl or scoop them into muffin tins the night before?
Yes, it's fine to make the batter up the night before and bake the next morning. Scooping it into the tins ahead of time, just saves you that extra step, and in the morning, that can be VERY valuable time!! ~Amy
