I am returning to yeast-bread baking after a long stretch of gluten-free years, as it seemed that gluten was responsible for a lifetime of skin issues. After some experimentation, it appears that in the absence of dairy, I'm apparently not sensitive to gluten. The dermatologist has me off dairy, and once again, I have SAF Red in the fridge, and KAF on the counter. The irony here is that this is my recipe (I'm Gail the nurse), and I am thankful indeed it was still available here, as I had forgotten some of the particulars. When I was making it weekly, there was no need to write it down, and the only time I ever did so was when I was emailing it to PJ seven years ago. As much as I love flour/water/salt/yeast bread, this soft-and-sweet loaf is by far the most popular that ever left my oven.
