Can I substitute active dry yeast for the instant yeast? If so, would I dissolve a 2 1/4 teaspoon packet of yeast in the two tablespoons of water with a little of the sugar from the recipe? Yes, you may make this substitution. Instant yeast is treated as a dry ingredient. It is not proofed. Frank @ KAF.
