Is it possible to substitute regular whole wheat flour not only for the white whole wheat flour but also for all - or most - of the unbleached all-purpose flour? My family prefers to eat whole grains as much as possible. Thanks. Sure, Danna - expect a much denser, and somewhat drier roll, if you substitute 100% red whole wheat. Also, not as tasty. But if you're used to whole grains, you might find it quite acceptable. Give it a good, long rise, to get as much lift as possible, OK? Good luck - PJH
