The baking powder makes the topping puff and rise a bit, which makes it lighter and actually more crispy once it cools. We like the texture this creates, but if you prefer more of a classic, streusel-like topping, feel free to leave it out. It might be worth trying at least once; you might find you like it just as much as we do! Kye@KAF
