Thank you for such a delightful recipe. I did prepare this for Thanksgiving, yesterday, and ended up silencing my guests. I didn't pick up any vegan ice cream for myself, but everyone else got to enjoy the crisp with vanilla bean ice cream. I combined gala and granny smith apples for JUST the right amount of tang, and used vegan butter. Other vegan recipes I have used in the past resulted in a crisp that is crunchy (like granola) on top and mushy soft on the bottom. The evenness of this crisp was something to be THANKFUL for!
