Hi Charlene, anytime you need to know the (rough) weight of a dough, all you need to do is add up the weight of the ingredients, and we supply the gram measurements for the ingredients in all of our recipes for any measurement over 1 tablespoon. Any weights your unsure of (such as eggs, which are 50g each) will likely be shown on our Ingredient Weight Chart.
There are options in this recipe so the weight will vary depending on whether you use the smaller amount of 810g of flour or larger amount of 930g, and if you choose the 113g of melted butter or the 99g of vegetable oil. So once you've made the decision of whether you'd like to use oil or butter, you'll be able to have a rough idea of the total range weight of the dough depending on how much flour you need to add.
