I left the dough in the fridge in a bowl with a towel on top. The top of the dough dryed out and formed a hard crust. What should I do with it? Remove the crusty part and use the rest of the dough? Try to blend it in? How could I avoid the crust in the future? Plastic wrap? Peggy, if it's very thick and hard, peel it off. If it seems like it would knead in (thin crust), knead it in. And yes, plastic wrap is the best way to protect dough, both in the fridge, and on the counter... PJH
