Hey, thanks for your time going over how to fold the baguette. I am making a different style (Vietnamese baguette) for Vietnamese Subs but I couldn't understand how to fold it properly. Last time I made them they wouldn't fluff up much. I think this was because I didn't fold it properly. It may also have to do with using rice flour in the recipe. Thank you. -J
