If I don't have unbleached all-purpose flour on hand can I substitue regular all purpose or unbleached bread flour? We do not recommend the use of flours that have added bleach, bromates or perservatives. Bread flour may produce a crumb that is too tight-it will not have those wonderful big holes you are looking for. Joan@bakershotline
