Why do you have to refrigerate the dough overnight? Can you bake a loaf after it has risen? According to authors of "Artisan Bread in Five Minutes a Day" you may bake after an additional 3 hours of rest in the refrigerator. The rest in the refrigerator gives your bread flavor. Joan@bakershotline
