I love this recipe but made the dough and have yet to make all the bread. How do I know if it goes bad? It'll get more and more tangy as it sits. I wouldn't let it sit longer than 7 days; not because it's "bad" in the sense of rotten, but that it probably won't rise well. You can always freeze it in 1-lb. pieces... PJH
