I have used Swans Down and Softasilk many times. I would bake this beautiful tender white cake with berries for my mom to celebrate the end of her radiation and chemo treatments - more weeks to go. She had a cancerous tumor in her sinus cavity and has not been able to really eat. Lots of Ensure. She's a retired baker and would appreciate a great cake.
