1. I have used Softsilk cake flour for many years. I love the thought of an unbleached cake flour! 2. My son's birthday is coming up soon, as is my husband's "adoption day" birthday. I would use the four for both of them. My son is also interviewing for his first teaching job this week so maybe a celebration cake is in order!
