The cake looks divine! Might have to try it with some lemon curd! 1) I've used Swan's Down and Softsilk brand cake flours since many of the cakes in the Cake Bible by Rose Levy Berenbaum call for it, and that is one of my favorite cake cookbooks. 2) I would use it to bake a cake for my daughter's second birthday, which is coming up.
