Bread flour has a protein content of 12.7%, Ap flour 11.7%. You can use AP flour for the closest substitution. Whole wheat has a higher protein content (14%) and will absorb more water, so adjust to get a soft supple consistency in the final dough. Happy baking! Laurie@KAF
