I am so happy I found this recipe. Last night, I attempted to make an all-lard pie crust for the Summertime Peach Pie recipe I was making today. I didn’t feel good about it - it was too wet. So I made an all-butter pie crust, which I also didn’t feel good about - it was too dry. Oh, well, it was late. I figured one of them would do the job. Today, I prepared my peach pie filling and tried to roll out first one dough, then the other. Both were simply disasters. I knew my pie was destined to be either tough, gluey, or both. What to do with that filling? Enter this recipe, doubled. The substitution of that pie filling for the peaches in this recipe worked perfectly. I was lucky enough to have a package of fresh mixed berries on hand to sprinkle over the top, and made the topping as written. What a happy disaster it turned out to be. This crisp is delicious!!
