This looks perfect! Mine is in the oven now. I ended up using hominy instead of corn, and sharp cheddar in place of the jack. I can't wait to taste the results, alongside some black beans and chipotle hot sauce. Thanks so much for this post! MMMMMM, sounds good, Stephanie! PJH
