I notice that you made these indoors over the stove. I have a ceramic cooktop and a cast iron griddle would scratch its surface. (Speaking from experience, sadly.) Is this something I could cook on my panini press instead? (It has flat plates with no grill marks.) Outside grilling is not my thing in the middle of a Phoenix summer! Looks delish! I think that would work. Give it a try and let us know how it comes out. Mary @ KAF
