Could you tell me how long the Italian meringue will last in an air tight plastic container in the refrigerator? I've never thought to store it in the fridge and use it later - so no, can't tell you, sorry. I can tell you that at room temperature, it gradually sinks and loses volume, day by day; by the 4th day or so, it's pretty flat. PJH
