HI Michele, Yes, it can work for an ice cream cake, but it will have a bit of a coating mouthfeel if the icing is served cold. I like your marshmallow option, it would not feel as "greasy" when served cold. For the coloring, you can split it once you make it, then color each bowl. ~ MJ
