Hi Ana, we haven't tested this recipe with coconut sugar, so you may have to do a little tweaking. I would expect it to work, but coconut sugar doesn't dissolve as easily during the creaming process, so the texture of the cookies may be a bit different. If you want to add peanut butter I would recommend substituting it for some of the butter in the recipe.
